Hi,
I'm new to using bugzilla and would like to do the following.
Use the current "Version" field for the version where a bug was found.
Add a new version field, "target release", for where the bug will be
fixed.
I don't believe we have an admin for bugzilla, so I'm it by default.
Any help would be appreciated.

please make yourself familiar with Bugzilla's parameters. You'll want
to switch Bugzilla's usetargetmilestone parameter on so that you can
use Bugzilla's Target Milestone field.
